Dr. Ruby Lathon

Dr. Ruby Lathon is a certified holistic nutritionist and inspires with a powerful story of recovering from thyroid cancer through alternative treatment focused on a whole food, plant-based diet. Dr. Lathon was featured in the hit documentary, What the Health and will be featured in two upcoming health documentaries. Dr. Lathon worked as a researcher and an award-winning engineer, and now teaches others how to re-engineer their health and live disease free.

 

Dr. Lathon received her Ph.D. and M.S. degrees in Industrial and Systems Engineering, from the University of Alabama in Huntsville, and a B.S. in Computer Science from Oakwood University.  Before leaving behind her successful engineering career, Dr. Lathon served as Vice President of an engineering and management consulting firm and was a Senior Engineer at Sandia National Laboratories, a national security research laboratory. She also served as a Research Fellow at NASA Marshall Space Flight Center. 


After healing herself of cancer, Dr. Lathon transitioned to a career in plant-based nutrition and received her holistic nutrition certification from the Washington Institute of Natural Medicine. Dr. Lathonserved as Nutrition Policy Manager at the Physicians Committee for Responsible Medicine, where she developed and led a national grassroots campaign to advocate legislation for more healthful, plant-based meal options in the National School Lunch Program. Through her organization, Roadmap to Holistic Health, Dr. Lathon works with a team of experts to teach people how to heal naturally and achieve optimal health. Her organization hosts several health conferences, workshops, vegan and raw nutrition and cooking classes, and provides customized nutritional consultations and coaching programs.

 

Dr. Lathon is an inspirational and sought-after speaker on motivation, natural health, healing, and plant-based nutrition. Dr. Lathon has appeared on The Roland Martin Show, Good Morning Washington, and is a repeated guest on the popular, Karen Hunter Radio Show, among others.Dr. Lathon has also been a keynote speaker at numerous spiritual and church organizations across the country and is host of The Veggie Chest with Dr. Ruby, a plant-based cooking show, featured on FoodChannel.com, AOL.on, kweliTV, ifoodTV, and many other outlets.
